Is there any way so that when you click on the "Quote" button, the whole message (They you want to quote) automatically becomes selected and pasted into your reply?

Did you check this option. Select the content you want to quote and click the "Quote" button at the bottom right.

Could someone point out to me where to find the controls over which BBcodes are available to users? I found them once but now no matter how hard I look nothing's turning up.

hmm, basically bb codes are available for all users. if you want to know where to find the codes, basically go to yoursite.domain.com/index/17

is it possible to use a bb code to hide something from certain groups but allow other groups to see it?

I know russian and there is translation:
First you need to hide you default buttons you can hide whatever buttons you like ...(author hide everything, but left size,family,color ) in forum templates between <head> and </head> you need to write

And after this you need to go to Add new entry template (forum template), and write it before $BBCODES$ and add images for same functions that was before.
