Put the title on your site: Place $SITE_NAME$ where you want the title to be displayed.
Change settings: Log into Control Panel (CP) then on the admin bar go to General -> Common settings

CriS, i think you need to be more specific about what you want we cannot guess what of the hundreds options you are talking about , if you can't say it in words , provide a screenshot about what you want to change

CriS, you can replace necessary blocks on your site by pressing only 1 button. For this purpose you should enter the section "Design Customization" -> "Quick replacement".
You can also change the site name via Builder: Admin Bar -> Builder -> Enable Builder -> edit the title and click "Save changes". See the following forum thread for more info - http://forum.ucoz.com/forum/5-5862-1
