Hello, I'm not talking so much English, so I hope you understand me.
When writing a message, there are all kinds of possibilities. My question is, how can I add / remove / change options there?

Yes you can.

Goto cp, Customize design, find New message form under forum, and

Code
<td class="gTableRight" id="frM58">$BBCODES$
  <?if($BBCODES$)?>
  <div style="padding-bottom: 2px;"> <span class="bbc1" id="bc20">
  <input value="o" style="text-decoration: overline;" onclick="simpletag('o','','','message',''); return false;" class="codeButtons" title="The bar of the text" name="o" type="button">
  </span><span class="bbc1" id="bc21">
  <input value="j" onclick="simpletag('j','','','message',''); return false;" class="codeButtons" title="The text of the page width" name="j" type="button">
  </span><span class="bbc1" id="bc22">
  <input value="sub" onclick="simpletag('sub','','','message',''); return false;" class="codeButtons" title="Subscript" name="sub" type="button">
  </span><span class="bbc1" id="bc23">
  <input value="sup" onclick="simpletag('sup','','','message',''); return false;" class="codeButtons" title="Superscript" name="sup" type="button">
  </span><span class="bbc1" id="bc24">
  <input value="Video" title="Add a link to a video file" onclick="tag_video()" class="codeButtons" name="video" type="button">
  </span><span class="bbc1" id="bc25">
  <input value="Audio" title="Add a link to audio file" onclick="tag_audio()" class="codeButtons" name="audio" type="button">
  </span><span class="bbc1" id="bc26">
  <input value="hr" onclick="emoticon('[hr]');return false;" class="codeButtons" title="Line" name="hr" type="button">
  </span><span class="bbc1" id="bc27">
  <input value="s" style="text-decoration: line-through;" onclick="simpletag('s','','','message',''); return false;" class="codeButtons" title="Strikethrough text" name="s" type="button">
  </span><span class="bbc1" id="bc28">
  <input value="©" onclick="emoticon('(c)');return false;" class="codeButtons" title="Copyright symbol!" name="(c)" type="button">
  </span><span class="bbc1" id="bc29">
  <input value="™" onclick="emoticon('(tm)');return false;" class="codeButtons" title="Trademark" name="(tm)" type="button">
  </span><span class="bbc1" id="bc30">
  <input value="®" onclick="emoticon('(r)');return false;" class="codeButtons" title="Registered" name="(r)" type="button">
  </span><span class="bbc1" id="bc31">
  <input value="*" onclick="emoticon('[*]');return false;" class="codeButtons" title="Item" name="*" type="button">
  </span><span class="bbc1" id="bc32">

LighTo273, the adjustment of the BB Code panel can only be achieved through the use of scripting. We don't provide support with custom coding here although you may be able to find some help by requesting a code here: http://forum.ucoz.com/forum/25-13186-1

Hope this helps, happy

Fonts of Forum are discussed here: http://forum.ucoz.com/forum/9-13196-1
Keep in mind that there is "All codes" button in the BB codes bar in the shape of "+". It might be handy.
